Broccoli and Dolcelatte® Soup

 

Broccoli and Dolcelatte® Soup

Serves 2
Prep: less then 30 minutes

 

 

  • 250ml water or vegetable stock
  • 250g broccoli florets
  • Salt and freshly ground black pepper
  • 80g Galbani Dolcelatte® classico
  1. Boil the water in a saucepan.
  2. Add the Broccoli florets, bring to boil and cook until the broccoli is slightly tender (2-3 minutes).
  3. Season, then transfer the florets with a small amount of the boiled broccoli water to a liquidiser.
  4. Blend until smooth.
  5. Ladle the soup into serving bowls and serve with sprinkling on top small cubes of Galbani Dolcelatte® classico.
