Quesadilla with Melting Brie and Grapes
Serves 4

- 4 flour tortillas
- 200 g pkt Président Brie, sliced
- 200 g (7 oz) green seedless grapes, halved
- 1 tbsp finely chopped tarragon
- 2 tsp smoked or sweet paprika
- 1 tbsp olive oil
- Lay the tortillas out on a clean work surface. Divide the Brie between each flour tortilla, arranging the pieces on one half. Then scatter over the grapes and tarragon. Season each with a little paprika and a little salt.
- Fold each tortilla in half to make a half moon and brush with a little olive oil. Heat a large griddle pan until hot and then cook the tortillas for 3-4 mins, turning once, until crispy and cheese is starting to ooze. (You may have to do this in batches, if so keep the cooked ones warm in the oven while you cook the rest). Cut into wedges and serve immediately with salad.
